Description

Moist and old-fashioned Lazy Amish Pineapple Cake made with cake mix and cream cheese frosting.


Ingredients

1 (15.25 oz) box yellow cake mix

1 (20 oz) can crushed pineapple with juice

3 large eggs

1/2 cup vegetable oil

8 oz cream cheese, softened

2 cups powdered sugar

1 teaspoon vanilla extract

1/2 cup chopped pecans or walnuts (optional)


Instructions

1. Preheat oven to 350°F (175°C) and grease 9×13 pan.

2. Mix cake mix, pineapple, eggs, and oil until smooth.

3. Pour batter into pan and bake 40 minutes.

4. Cool completely.

5. Beat cream cheese, powdered sugar, and vanilla.

6. Frost cake and add nuts if desired.

Notes

Do not drain pineapple.

Cool cake fully before frosting.

Store chilled for best texture.
