Soft, chewy no-bake keto peanut butter bars with rich chocolate topping and only 2g net carbs.
Ingredients
1½ cups natural peanut butter
½ cup powdered erythritol
¼ cup coconut flour
¼ cup unsalted butter, melted
1 tsp vanilla extract
¼ tsp salt
¾ cup sugar-free chocolate chips
1 tbsp coconut oil
Instructions
1. Line an 8×8 pan with parchment.
2. Mix peanut butter layer ingredients until smooth.
3. Press mixture firmly into pan.
4. Melt chocolate chips with coconut oil.
5. Spread chocolate over peanut butter layer.
6. Chill 30–45 minutes until set.
7. Slice and serve.
Notes
Use unsweetened peanut butter.
Store chilled for best texture.
