Soft, chewy Keto Magic Cookies packed with almonds, coconut, and sugar-free chocolate chips. A quick and delicious low-carb treat!
Ingredients
1 cup almond flour
1/2 cup unsweetened shredded coconut
1/3 cup chopped almonds (plus extra for topping)
1/2 cup sugar-free chocolate chips
2 tablespoons flaxseed meal
1/2 teaspoon baking powder
Pinch of salt
1/3 cup unsalted butter, melted
1/3 cup keto condensed milk OR 1/4 cup heavy cream + 2 tablespoons powdered sweetener
1 large egg
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Mix almond flour, shredded coconut, chopped almonds, flaxseed meal, baking powder, and salt.
3. Add melted butter, keto condensed milk (or cream + sweetener), egg, and vanilla. Mix until thick.
4. Fold in sugar-free chocolate chips.
5. Scoop dough onto baking sheet and flatten slightly.
6. Top with extra chopped almonds.
7. Bake 10–12 minutes until edges are golden.
8. Cool on baking sheet for 10 minutes.
Notes
For extra crunch, toast your almonds before adding.
Store in fridge up to 1 week or freeze up to 3 months.
