Description
Fluffy, cinnamon-kissed keto cloud bread made with cottage cheese. High protein, low carb, and tastes like a soft cinnamon roll cloud!
Ingredients
Cloud Bread Batter:
1 cup cottage cheese
4 large eggs, separated
2 tbsp almond flour
2 tbsp powdered keto sweetener
1/2 tsp vanilla extract
Cinnamon Swirl:
2 tbsp melted butter
1 tbsp cinnamon
1 1/2 tbsp keto brown sweetener
Instructions
1. Preheat oven to 300°F (150°C). Line loaf pan.
2. Blend cottage cheese, egg yolks, sweetener, almond flour, and vanilla.
3. Whip egg whites to stiff peaks.
4. Fold gently.
5. Mix cinnamon swirl ingredients.
6. Layer batter and swirl mixture.
7. Bake 35–40 minutes until golden.
Notes
Cool completely for best texture.
For extra sweetness, drizzle with keto maple syrup.
