Description
Keto Coffee Cake Cookies are soft almond flour cookies topped with a buttery cinnamon streusel and optional sugar-free glaze. Low carb, gluten free, and only 3 net carbs each.
Ingredients
2 cups almond flour
2 tablespoons coconut flour
1/2 cup monk fruit sweetener
1/4 cup brown keto sweetener
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 cup butter
1 egg
1 teaspoon vanilla extract
1 tablespoon almond milk
1/3 cup almond flour (streusel)
2 tablespoons brown keto sweetener (streusel)
1/2 teaspoon cinnamon (streusel)
2 tablespoons cold butter (streusel)
1/2 cup powdered monk fruit (glaze)
1–2 tablespoons almond milk (glaze)
1/4 teaspoon vanilla (glaze)
Instructions
1. Preheat oven to 350°F.
2. Prepare streusel topping.
3. Cream butter and sweeteners.
4. Add egg, vanilla, almond milk.
5. Combine dry ingredients separately.
6. Mix dry into wet.
7. Form cookies and flatten.
8. Top with streusel.
9. Bake 12-14 minutes.
10. Cool and drizzle glaze if desired.
Notes
Do not overbake.
Chill dough for thicker cookies.
Store airtight up to 1 week.
Freeze up to 2 months.
