Description

This honey vanilla cottage cheese sheet cake is light, moist, and incredibly comforting. A simple one-pan cake perfect for sharing.


Ingredients

Scale

2 cups cottage cheese

1 cup all-purpose flour

1 cup honey

1/2 cup sugar

1/4 cup unsalted butter, melted

3 large eggs

2 teaspoons vanilla extract

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup milk

1/4 cup sliced almonds (optional)


Instructions

1. Preheat oven to 350°F and line a 9×13-inch pan.

2. Blend cottage cheese until smooth.

3. Whisk cottage cheese with honey, sugar, butter, eggs, vanilla, and milk.

4. Stir in flour, baking powder, and salt.

5. Pour batter into pan and smooth top.

6. Sprinkle almonds on top if using.

7. Bake 35–40 minutes until set.

8. Cool before slicing.

Notes

Blend cottage cheese well for smooth crumb.

Do not overbake.

Optional almond topping adds crunch.
