Description

This Homemade Walnut Cake is soft, moist, and full of comforting flavor. Made with simple ingredients, crunchy walnuts, and sweet raisins, it’s the perfect cake to enjoy with afternoon coffee or tea.

Ingredients

Scale

3 eggs

1 cup sugar

1/2 cup vegetable oil

1 cup milk

2 cups wheat flour

1 tablespoon baking powder

1 teaspoon vanilla extract

1 cup chopped walnuts

1/2 cup raisins

1 pinch salt

Powdered sugar for dusting (optional)

Instructions

1. Preheat the oven to 350°F (175°C) and grease a 9-inch cake pan.

2. In a large bowl whisk together the eggs and sugar until light and slightly creamy.

3. Add the oil, milk, and vanilla extract and mix until smooth.

4. In another bowl combine flour, baking powder, and salt.

5. Gradually add the dry ingredients to the wet mixture while stirring gently.

6. Fold in the chopped walnuts and raisins.

7. Pour the batter into the prepared cake pan and spread evenly.

8. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.

9. Allow the cake to cool for about 15 minutes before removing from the pan.

10. Dust with powdered sugar, slice, and serve.

Notes

Lightly toast the walnuts for deeper flavor.

If raisins are dry, soak them in warm water for 10 minutes before adding.

You can replace walnuts with pecans or hazelnuts.

Store the cake in an airtight container for up to 3 days.
