Description

A moist, bright lemon loaf made high-protein with blended cottage cheese. Perfect for breakfast, snacks, or dessert.


Ingredients

Scale

1 cup cottage cheese, blended smooth

3 large eggs

½ cup granulated sugar or sugar-free alternative

¼ cup unsalted butter, melted

¼ cup fresh lemon juice

1 tbsp lemon zest

1 tsp vanilla extract

1¾ cups all-purpose flour

2 tsp baking powder

¼ tsp salt

½ cup powdered sugar (optional glaze)

12 tbsp lemon juice (glaze)


Instructions

1. Preheat oven to 350°F.

2. Blend cottage cheese until smooth.

3. Whisk eggs, sugar, butter, lemon juice, zest, and vanilla.

4. Stir in cottage cheese.

5. Mix dry ingredients separately.

6. Fold dry ingredients into wet batter.

7. Bake 45–55 minutes.

8. Cool and glaze before serving.

Notes

Blend cottage cheese fully.

Flavor improves after resting overnight.
