Description
These Healthy Peanut Butter Greek Yogurt Cookies are naturally sweetened, high-protein, and have soft, tender centers.
Ingredients
1/2 cup Greek yogurt
1/2 cup peanut butter
1/4 cup honey
1 teaspoon vanilla extract
1 cup oat flour
1/2 teaspoon baking powder
1/3 cup chocolate chips
Pinch of salt
Instructions
1. Preheat oven to 350°F and line a baking sheet with parchment.
2. Mix Greek yogurt, peanut butter, honey, and vanilla.
3. Stir in oat flour, baking powder, and salt.
4. Fold in chocolate chips.
5. Scoop dough onto baking sheet and flatten slightly.
6. Bake 10–12 minutes until soft and lightly golden.
7. Cool before serving.
Notes
Use maple syrup instead of honey if desired. Chill dough for 10 minutes if too sticky. Store up to 1 week in fridge or freeze for 3 months.
