Wholesome and indulgent, these Healthy Peanut Butter Greek Yogurt Chocolate Oatmeal Cookie Cups are chewy, chocolatey, and packed with protein.
Ingredients
1 ½ cups rolled oats
¼ cup cocoa powder
¼ cup honey or maple syrup
¼ cup peanut butter
¼ cup Greek yogurt
1 teaspoon vanilla extract
¼ cup mini chocolate chips
Instructions
1. Preheat oven to 350°F (175°C) and prepare muffin tin.
2. Mix oats, cocoa powder, and chocolate chips.
3. Stir in peanut butter, honey/maple syrup, yogurt, and vanilla until sticky.
4. Spoon mixture into muffin tin and press to form cups.
5. Bake 10–12 minutes, then cool before serving.
Notes
Swap almond butter for peanut butter if desired.
For vegan version, use coconut yogurt and maple syrup.
