Description
Healthy Greek yogurt peanut butter muffins with chocolate chips and soft, tender centers.
Ingredients
1/2 cup Greek yogurt
1/3 cup peanut butter
1/4 cup honey or maple syrup
1 large egg
1 teaspoon vanilla extract
1 cup oat flour
1/4 cup chocolate chips
1/2 teaspoon baking powder
Pinch of salt
Instructions
1. Preheat oven to 350ยฐF (175ยฐC) and prepare muffin tin.
2. Whisk yogurt, peanut butter, sweetener, egg, and vanilla.
3. Stir in oat flour, baking powder, and salt.
4. Fold in chocolate chips.
5. Divide batter into muffin cups.
6. Bake 14โ18 minutes until just set.
7. Cool slightly before serving.
Notes
Do not overbake to keep centers soft.
Use plain Greek yogurt for best results.
Store in airtight container.
