Description
These healthy chickpea blondies are fudgy, soft, naturally gluten-free, vegan, and made without eggs or dairy. A perfect healthy dessert.
Ingredients
1 can chickpeas drained and rinsed
1/4 cup peanut butter or almond butter
1/4 cup maple syrup or honey
2 tbsp coconut sugar or brown sugar
1 tsp vanilla extract
1/2 tsp baking powder
Pinch of salt
1/4 cup chocolate chips
Instructions
1. Preheat oven to 350°F and line baking pan
2. Blend chickpeas, peanut butter, maple syrup, sugar, vanilla, baking powder, and salt until smooth
3. Stir in chocolate chips
4. Spread batter into pan
5. Bake 18–22 minutes
6. Cool completely before slicing
Notes
Rinse chickpeas well
Blend batter until smooth
Do not overbake
Store in fridge for best texture
