  • 45 medium russet potatoes, thinly sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • ½ cup milk
  • 1 cup shredded cheddar cheese (plus more for topping)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme (optional)

Instructions

  • Preheat & Prep: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned. Add the diced onion and minced garlic, cooking until softened. Drain excess grease and season with salt, pepper, paprika, garlic powder, onion powder, and thyme.
  • Make the Sauce: In a mixing bowl, whisk together the cream of mushroom soup and milk until smooth. Stir in ½ cup shredded cheese for extra creaminess.
  • Assemble the Casserole: Layer half of the sliced potatoes in the greased baking dish. Spread half of the cooked beef mixture on top, then pour half of the creamy sauce over it. Repeat the layers, finishing with the sauce.
  • Bake Covered: Cover tightly with aluminum foil and bake for 50 minutes.
  • Add Cheese & Finish Baking: Remove the foil, sprinkle the remaining shredded cheese on top, and bake uncovered for another 15 minutes until bubbly and golden.
  • Rest & Serve: Let the casserole cool for 5-10 minutes before slicing. Enjoy!
