These Greek Yogurt Peanut Butter Chocolate Fudge Cookies are fudgy, soft-centered, and made with wholesome ingredients like oat flour, Greek yogurt, and natural peanut butter.
Ingredients
½ cup peanut butter
½ cup Greek yogurt
¼ cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
½ cup oat flour
¼ cup cocoa powder
½ teaspoon baking powder
½ cup chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Whisk peanut butter, Greek yogurt, honey, egg, and vanilla until smooth.
3. Stir in oat flour, cocoa powder, and baking powder until just combined.
4. Fold in chocolate chips.
5. Scoop dough onto baking sheet and bake 10–12 minutes.
6. Cool 5 minutes before enjoying.
Notes
For a vegan version, swap the egg for a flax egg and use dairy-free yogurt and chocolate chips.
Do not overbake—the centers should look slightly soft when you pull them out.
