High Protein Greek Yogurt Chocolate Banana Oatmeal Muffins are soft, chocolatey muffins made with oats, banana, Greek yogurt, and protein powder for a nourishing breakfast or snack.
Ingredients
1 cup rolled oats
ยฝ cup Greek yogurt
1 ripe banana, mashed
1 large egg
ยผ cup honey or maple syrup
1 teaspoon vanilla extract
2 tablespoons cocoa powder
1 scoop chocolate protein powder
ยฝ teaspoon baking powder
Pinch of salt
Instructions
1. Preheat oven to 350ยฐF and prepare muffin tin.
2. Blend oats into fine flour.
3. Mix yogurt, banana, egg, honey, and vanilla.
4. Stir in oat flour, cocoa powder, protein powder, baking powder, and salt.
5. Divide batter into muffin cups.
6. Bake 18โ22 minutes.
7. Cool before serving.
Notes
Use ripe bananas.
Do not overbake.
