Description
Fluffy and tender Creamy Cottage Cheese Protein Crepes Rolls filled with a smooth high-protein filling. Perfect healthy breakfast or brunch.
Ingredients
2 eggs
1 cup milk
1 cup all-purpose flour
1 tbsp melted butter
1 tbsp sugar
1/2 tsp vanilla
Pinch salt
1 cup cottage cheese
2 tbsp honey
1 tsp vanilla
1 tbsp lemon zest
2 tbsp Greek yogurt
Instructions
1. Whisk eggs, milk, butter, sugar, vanilla and salt.
2. Add flour and mix until smooth.
3. Rest batter 10 minutes.
4. Cook thin crepes in buttered pan.
5. Blend cottage cheese until smooth.
6. Mix filling ingredients.
7. Spread filling on crepes and roll.
8. Slice and serve.
Notes
Let batter rest for tenderness.
Blend cottage cheese well.
Best served fresh but can refrigerate 2 days.
