Fluffy Cottage Cheese Cloud Bread is a low-carb, gluten-free bread alternative that’s light as air, keto-friendly, and only 55 calories per round.
Ingredients
3 large eggs, separated
1/4 cup cottage cheese, blended smooth
1/4 tsp cream of tartar
1 tbsp almond flour
1/2 tsp baking powder
Pinch of salt
Instructions
1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment.
2. Blend cottage cheese until smooth.
3. Separate eggs into two bowls.
4. Whip egg whites with cream of tartar until stiff peaks form.
5. Mix yolks with cottage cheese, almond flour, baking powder, and salt.
6. Fold whipped whites into yolk mixture gently.
7. Spoon 6 rounds onto parchment and bake 25–30 minutes until golden.
8. Cool completely before peeling off parchment.
Notes
Store in an airtight container for up to 3 days. Can be frozen up to 1 month. Toast to reheat for best texture.
