Fluffy coconut cottage cheese mug cake made in minutes. A high-protein single-serve dessert or breakfast.
Ingredients
1/2 cup cottage cheese
1/4 cup unsweetened shredded coconut
1 large egg
2 tbsp almond flour
1 tbsp maple syrup
1/2 tsp vanilla extract
1/4 tsp baking powder
Pinch of salt
Instructions
1. Blend cottage cheese until smooth (optional).
2. Whisk all wet ingredients in a microwave-safe mug.
3. Stir in dry ingredients until combined.
4. Microwave 90–120 seconds until set.
5. Cool briefly and enjoy.
