Ingredients

1 cup (250 g) cottage cheese (whole milk or low-fat)

3 large eggs, room temperature

¾ cup (150 g) granulated sugar or coconut sugar

½ cup (120 ml) vegetable oil or melted butter

1 teaspoon pure vanilla extract

Zest of 1 lemon (optional)

1½ cups (190 g) all-purpose flour

2 teaspoons baking powder

¼ teaspoon salt

2 medium apples, peeled, cored, and thinly sliced

1 tablespoon lemon juice

2 tablespoons powdered sugar, for dusting after baking


Instructions

1. Preheat oven to 350°F (175°C). Grease a 9-inch round springform or cake pan and line with parchment paper.

2. In a large bowl, whisk together cottage cheese, eggs, sugar, oil, and vanilla extract until smooth and creamy.

3. Add flour, baking powder, salt, and lemon zest. Stir gently with a spatula until just combined — do not overmix.

4. Fold in half of the apple slices and pour the batter into the prepared pan.

5. Arrange the remaining apple slices on top in a circular pattern for a pretty finish.

6. Bake for 40–45 minutes, or until the cake is golden and a toothpick inserted in the center comes out clean.

7. Let the cake cool for 10–15 minutes, then dust with powdered sugar before serving.

• For a smoother texture, blend the cottage cheese before mixing.

• Use tart apples like Granny Smith for the best flavor balance.
