Soft, chewy flourless peanut butter cookies that are high-protein, gluten-free, and ready in under 20 minutes.
Ingredients
Scale
1 cup peanut butter
1/4 cup sugar or sweetener
1 egg
1/2 tsp baking soda
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C).
2. Mix all ingredients until smooth.
3. Scoop dough into balls.
4. Press with fork and bake 8–10 minutes.
5. Cool and enjoy.
Notes
Do not overbake the cookies.
Use creamy peanut butter for best texture.
