Ingredients
2 large lemons (preferably organic)
4 large eggs
1/2 cup honey or maple syrup
2 cups almond flour
1 tsp baking powder (gluten-free if needed)
Pinch of salt
Instructions
1. Zest and juice both lemons.
2. Whisk together eggs and honey until pale.
3. Stir in lemon juice and zest.
4. Fold in almond flour, baking powder, and salt.
5. Bake in a lined cake pan at 350°F (175°C) for 25–30 minutes.
6. Cool, then serve.
