Description
Rich, fudgy, flourless brownies made with cottage cheese for extra protein and creaminess. Gluten-free, high-protein, and perfect for a guilt-free chocolate fix.
Ingredients
1 cup cottage cheese
2 large eggs
¼ cup cocoa powder
½ cup almond butter (or peanut butter)
¼ cup honey or maple syrup
½ tsp vanilla extract
½ tsp baking powder
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8 baking dish with parchment paper.
2. Blend cottage cheese until smooth.
3. Mix cottage cheese, eggs, almond butter, honey, and vanilla together.
4. Add cocoa powder and baking powder. Stir until combined.
5. Pour batter into prepared dish and bake 25–30 minutes.
6. Cool before slicing and enjoy!
Notes
Blend cottage cheese well for smooth texture.
Do not overbake for fudgy brownies.
Store in fridge for up to 5 days or freeze for 2 months.
