Description
Flourless cottage cheese blueberry cake that’s light, creamy, naturally gluten-free, and packed with protein. Easy to prep and perfect for breakfast or dessert.
Ingredients
1½ cups cottage cheese
3 large eggs
⅓ cup honey or maple syrup
1 teaspoon vanilla extract
½ teaspoon baking powder
¼ teaspoon salt
¼ cup cornstarch or arrowroot starch
1 cup blueberries
Instructions
1. Preheat oven to 350°F and prepare pan.
2. Blend cottage cheese, eggs, sweetener, vanilla, baking powder, salt, and starch until smooth.
3. Fold in blueberries.
4. Pour into pan and bake 40–45 minutes.
5. Cool completely before slicing.
Notes
Chill for firmer texture.
Do not overbake.
Use full-fat cottage cheese for creamier result.
