Description

This Flourless Cinnamon Swirl Greek Yogurt Cake is a moist, naturally gluten-free delight made with almond flour, Greek yogurt, and a cozy cinnamon swirl. Perfect as a wholesome breakfast or light dessert!


Ingredients

  • 1 cup (240g) plain Greek yogurt

  • 3 large eggs

  • ⅓ cup (80ml) maple syrup or honey

  • 1 tsp vanilla extract

  • ½ cup (50g) almond flour

  • ½ tsp baking soda

  • ¼ tsp salt

  • 2 tsp ground cinnamon

  • 2 tbsp maple syrup or honey (for cinnamon swirl)


Instructions

  • Preheat oven to 350°F (175°C). Grease and line an 8-inch baking pan.

  • In a bowl, whisk Greek yogurt, eggs, ⅓ cup maple syrup or honey, and vanilla.

  • Add almond flour, baking soda, and salt. Stir until just combined.

  • In a small bowl, mix cinnamon with 2 tbsp maple syrup or honey.

  • Pour half the batter into the pan. Drizzle half the cinnamon mixture, swirl with a knife. Repeat with remaining batter and swirl again.

  • Bake 30–35 minutes or until golden and toothpick comes out mostly clean.

  • Cool in pan for 10 minutes, then transfer to a wire rack.

Notes

  • Use full-fat Greek yogurt for best results

  • Try adding thinly sliced apples or pears for extra moisture

  • Store leftovers in the fridge for a denser, cheesecake-like bite the next day
