Description
This Flourless Chai Spice Cake is warmly spiced with cinnamon, cardamom, ginger, nutmeg, and cloves. Moist, gluten-free, and perfect with tea or coffee.
Ingredients
2 cups almond flour
3 large eggs
1/2 cup Greek yogurt (or dairy-free alternative)
1/3 cup honey or maple syrup
1/4 cup coconut oil or butter, melted
1 tsp vanilla extract
2 tsp ground cinnamon
1 tsp ground cardamom
1 tsp ground ginger
1/2 tsp nutmeg
1/4 tsp cloves
1 tsp baking powder
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C). Grease and line an 8-inch cake pan.
2. Whisk eggs, yogurt, honey/maple syrup, oil, and vanilla.
3. Add almond flour, baking powder, salt, and spices. Mix until combined.
4. Pour into pan and bake 30–35 minutes, until toothpick comes out clean.
5. Cool slightly, slice, and serve.
Notes
For dairy-free, use coconut yogurt and coconut oil.
Store covered at room temp 2 days, fridge 5 days, or freeze up to 2 months.
