Ingredients

Scale

3 ripe bananas

2 cups rolled oats

2 eggs

1 teaspoon baking soda

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup walnuts or dark chocolate chips (optional)

Instructions

1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.

2. Blend rolled oats in a blender until they resemble flour.

3. Add bananas, eggs, and vanilla extract and blend until smooth.

4. Mix baking soda, cinnamon, and salt in a bowl.

5. Combine the blended batter with the dry ingredients.

6. Fold in walnuts or chocolate chips if using.

7. Pour batter into loaf pan and bake for 40-45 minutes.

Notes

Use very ripe bananas for natural sweetness.

Let the bread cool before slicing to prevent crumbling.
