Description
This never-fail old fashioned fruit cake is moist, rich, and full of warm spices and soaked dried fruits. Perfect for holidays and tea time.
Ingredients
All-purpose flour 1½ cups
Baking powder 1 tsp
Ground cinnamon 1 tsp
Ground nutmeg ½ tsp
Ground cloves ¼ tsp
Salt ¼ tsp
Raisins 1 cup
Chopped dates ½ cup
Dried cranberries ½ cup
Chopped dried apricots ½ cup
Orange juice ½ cup
Butter ½ cup
Brown sugar ¾ cup
Eggs 2
Vanilla extract 1 tsp
Milk ¼ cup
Instructions
1. Soak dried fruits in orange juice for at least 30 minutes
2. Preheat oven to 325°F and line cake pan
3. Mix flour, baking powder, spices, and salt
4. Cream butter and brown sugar
5. Add eggs and vanilla
6. Add dry ingredients alternating with milk
7. Fold in soaked fruits
8. Pour into pan and bake 60–70 minutes
9. Cool completely before slicing
Notes
Soak fruits overnight for best flavor
Do not overbake
Store cake overnight before serving
Brush with orange juice after baking for moisture
