Description

Moist Espresso Date Honey Cake naturally sweetened with dates and honey and flavored with rich espresso and warm spices.


Ingredients

Scale

1 cup pitted dates, chopped

1 cup hot water

1 tablespoon instant espresso powder

1/2 cup unsalted butter

1/2 cup honey

1/2 cup brown sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg


Instructions

1. Soak chopped dates in hot water and espresso powder for 10–15 minutes.

2. Cream butter, honey and brown sugar until fluffy.

3. Add eggs and vanilla and mix well.

4. Mix dry ingredients in another bowl.

5. Combine dry ingredients and date mixture into batter.

6. Pour into pan and bake at 350°F for 30–35 minutes.

7. Cool before slicing and dust with powdered sugar.

Notes

Use soft dates for best texture.

Do not overmix the batter.

Cake tastes even better the next day.

You can add walnuts or chocolate chips.
