Description

Soft and cozy eggnog fruit bread made with warm spices and a tender crumb. A perfect holiday quick bread.


Ingredients

Scale

2 cups all-purpose flour

¾ cup sugar

2 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp nutmeg

½ tsp cinnamon

2 large eggs

½ cup vegetable oil or melted butter

¾ cup eggnog

½ cup raisins or dried cranberries (optional)

½ cup chopped nuts (optional)


Instructions

1. Preheat oven to 350°F (175°C) and prepare loaf pan.

2. Whisk dry ingredients together.

3. Whisk eggs, oil, and eggnog in another bowl.

4. Combine wet and dry ingredients gently.

5. Fold in optional fruit or nuts.

6. Bake 45–55 minutes until set.

Notes

Do not overmix.

Tent with foil if browning too quickly.

Cool fully before slicing.
