Description
Creamy, old-fashioned crustless coconut pie that forms its own crust as it bakes.
Ingredients
1 cup shredded coconut
1/2 cup granulated sugar
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
4 large eggs
1 cup whole milk
1 teaspoon vanilla extract
1/4 cup melted butter
Instructions
1. Preheat oven to 350°F and grease a pie dish.
2. Whisk sugar, flour, baking powder, and salt.
3. Add eggs, milk, vanilla, and butter.
4. Stir in coconut.
5. Pour into dish.
6. Bake 45–50 minutes until set.
7. Cool before slicing.
Notes
– Chill for cleaner slices.
– Sweetened coconut yields richer flavor.
– Serve warm or cold.
