Ingredients
1 cup cottage cheese
3 large eggs, separated
1/2 teaspoon baking powder
1 teaspoon cornstarch (optional)
Pinch of salt
Instructions
1. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
2. Blend cottage cheese until smooth.
3. Separate eggs; whisk yolks with baking powder and salt.
4. Beat egg whites until stiff peaks form, then gently fold in yolk mixture.
5. Scoop onto baking sheet and bake for 25–30 minutes until golden.
Notes
Use room temperature eggs for best volume.
Add cornstarch for more structure if desired.
Store in the fridge for up to 3 days or freeze up to 1 month.
