Description
This dense winter fruit and nut cake is rich, spiced, and packed with dried fruits, nuts, and citrus zest. A cozy old-fashioned bake perfect for cold days.
Ingredients
200 g mixed dried fruits
100 g mixed nuts
200 g all-purpose flour
150 g brown sugar
100 g unsalted butter
3 large eggs
1 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
½ tsp ginger
¼ tsp cloves
¼ tsp salt
100 ml milk
Zest of 1 orange
Zest of 1 lemon
1 tbsp honey (optional)
Instructions
1. Preheat oven to 325°F.
2. Cream butter and sugar.
3. Add eggs one at a time.
4. Mix dry ingredients separately.
5. Combine batter with milk and zest.
6. Fold in fruit and nuts.
7. Bake 70–80 minutes until set.
Notes
Cake improves with time.
Store well wrapped.
