Description

A soft and tender vanilla breakfast loaf made with cream cheese for a rich yet light crumb that slices beautifully.


Ingredients

Scale

2 large eggs

3/4 cup granulated sugar

4 oz cream cheese, softened

1/3 cup neutral oil

1 cup milk

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

Pinch of salt


Instructions

1. Preheat oven to 350°F and grease a loaf pan.

2. Whisk eggs and sugar until pale and smooth.

3. Mix in softened cream cheese until mostly smooth.

4. Add oil, milk, and vanilla extract.

5. Whisk flour, baking powder, and salt separately.

6. Fold dry ingredients into wet batter just until combined.

7. Pour into loaf pan and smooth top.

8. Bake 45–50 minutes until a toothpick comes out clean.

9. Cool before slicing.

Notes

– Cream cheese should be fully softened.

– Do not overmix once flour is added.

– Flavor improves after resting.
