Cream Cheese Cranberry Loaf is soft, buttery, and bursting with tart cranberries. A tangy-sweet quick bread perfect for holidays, brunch, or gifting.
Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter
4 oz cream cheese
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
½ teaspoon almond extract
½ cup milk
1½ cups cranberries
1 tablespoon flour (for cranberries)
1 cup powdered sugar (optional glaze)
2 tablespoons milk or orange juice (optional glaze)
Instructions
1. Preheat oven to 350°F.
2. Mix dry ingredients.
3. Cream butter and cream cheese.
4. Add sugar and beat.
5. Add eggs and extracts.
6. Alternate dry ingredients with milk.
7. Toss cranberries with flour.
8. Fold into batter.
9. Bake 55-65 minutes.
10. Cool and glaze if desired.
Notes
Use room temperature ingredients.
Do not overmix.
Store airtight up to 3 days.
Freeze up to 2 months.
