Ingredients
2 cups all-purpose flour
1 tbsp orange zest
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
¾ cup granulated sugar
½ cup unsalted butter, melted
2 large eggs
½ cup orange juice
½ cup milk
1 tsp vanilla extract
1½ cups cranberries
Instructions
1. Preheat oven to 375°F and line muffin tin.
2. Whisk dry ingredients and orange zest together.
3. Mix butter, eggs, orange juice, milk, and vanilla.
4. Combine wet and dry ingredients gently.
5. Fold in cranberries.
6. Fill muffin cups and bake 18–22 minutes.
7. Cool slightly before serving.
Notes
Do not overmix batter.
Fresh orange zest gives best flavor.
