Description
Soft and moist cranberry orange bread bursting with tart cranberries and bright citrus flavor, topped with a simple sweet orange glaze.
Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup granulated sugar
1/2 cup unsalted butter melted
2 large eggs
1/2 cup fresh orange juice
1 tablespoon orange zest
1/2 cup milk or Greek yogurt
1 1/2 cups fresh or frozen cranberries
1 cup powdered sugar
2–3 tablespoons orange juice for glaze
1/2 teaspoon orange zest for glaze
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan
2. Whisk flour, baking powder, baking soda, and salt in a bowl
3. In another bowl mix sugar, melted butter, eggs, orange juice, orange zest, and milk until smooth
4. Gradually combine the dry ingredients with the wet ingredients
5. Fold in the cranberries gently
6. Pour the batter into the loaf pan and smooth the top
7. Bake for 50 to 55 minutes until a toothpick comes out clean
8. Let the bread cool for 10 minutes then transfer to a rack
9. Whisk powdered sugar with orange juice to make the glaze
10. Drizzle the glaze over the cooled bread before slicing
Notes
Use fresh orange zest for the strongest citrus flavor
Toss cranberries lightly in flour to prevent them from sinking
Allow the bread to cool completely before glazing
You can substitute dried cranberries if fresh are unavailable
