Description
These Cranberry Almond Biscotti are crisp, flavorful, and perfect for dipping in coffee or tea. Studded with tart cranberries and crunchy almonds, they’re an elegant treat that’s surprisingly easy to make.
Ingredients
2 cups all-purpose flour
1 tsp baking powder
¼ tsp salt
½ cup sugar
2 eggs
1 tsp vanilla extract
½ cup dried cranberries
½ cup sliced almonds
Instructions
1. Preheat oven to 350°F and line baking sheet with parchment paper.
2. Whisk together flour, baking powder, and salt.
3. Beat sugar and eggs until pale and fluffy, then mix in vanilla.
4. Stir in dry ingredients, then fold in cranberries and almonds.
5. Shape dough into a log and bake 25–30 minutes.
6. Cool 10 minutes, slice, and bake again 8–10 minutes per side.
7. Cool completely before serving or storing.
Notes
For extra crunch, bake a few minutes longer in the second bake.
