Description
This Cottage Cheese Protein Cake is a light, gluten-free, grain-free dessert with 10g of protein per slice. Creamy, fluffy, and slightly tangy, it’s perfect as a healthy treat, post-workout snack, or cozy dessert with coffee.
Ingredients
1 cup cottage cheese
2 large eggs
2 tbsp honey or maple syrup
½ tsp vanilla extract
¼ cup almond flour
1 tbsp coconut flour
½ tsp baking powder
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and line a 6-inch baking pan with parchment paper.
2. Blend cottage cheese until smooth.
3. Whisk eggs, sweetener, and vanilla until fluffy.
4. Mix almond flour, coconut flour, baking powder, and salt in a bowl.
5. Combine wet and dry ingredients until smooth.
6. Pour batter into pan and bake 25–30 minutes until set.
7. Cool before slicing and enjoy.
Notes
For extra flavor, add lemon zest, cocoa powder, or chocolate chips. Chill before serving for a cheesecake-like texture.
