Description

These cottage cheese lemon cake bars are soft, zesty, lightly sweetened, and packed with protein. Made with almond flour and honey, they’re a refreshing, guilt-free dessert or post-workout snack.


Ingredients

1 cup cottage cheese

1 cup almond flour

1/2 cup honey

1/4 cup fresh lemon juice

1 tablespoon lemon zest

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

Pinch of salt


Instructions

1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

2. Add cottage cheese to a blender or food processor and blend until completely smooth.

3. In a mixing bowl, whisk together blended cottage cheese, eggs, honey, lemon juice, lemon zest, and vanilla extract.

4. Add almond flour, baking powder, and salt and mix until fully combined.

5. Pour batter into prepared pan and smooth the top evenly.

6. Bake for 30–35 minutes, until set and lightly golden on top.

7. Allow bars to cool completely before slicing into squares.

Notes

Blend cottage cheese thoroughly for the smoothest texture.

Use fresh lemon juice for the best flavor.

Bars will firm up as they cool and chill.
