Description

This 5-Minute Cottage Cheese Cinnamon Roll Mug Cake is warm, fluffy, perfectly sweet, and packed with protein. A quick single-serve cinnamon roll fix made in the microwave with simple ingredients.


Ingredients

1/4 cup cottage cheese

1 large egg

2 tablespoons almond flour (or oat flour)

1 tablespoon maple syrup or honey

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon baking powder

Pinch of salt

Optional cinnamon swirl: 1 teaspoon maple syrup + 1/4 teaspoon cinnamon

Optional glaze: 1 tablespoon Greek yogurt or cream cheese + 1 teaspoon maple syrup + splash of milk


Instructions

1. Blend or mash the cottage cheese until smooth for the best texture.

2. In a microwave-safe mug, combine cottage cheese, egg, almond flour, maple syrup, vanilla extract, cinnamon, baking powder, and salt. Mix until fully combined.

3. If making the cinnamon swirl, mix maple syrup and cinnamon separately and gently swirl into the top of the batter.

4. Microwave for 60-90 seconds, starting with 60 seconds and adding 10-second intervals as needed until set but still soft in the center.

5. If desired, mix glaze ingredients and drizzle over the warm mug cake before serving.

Notes

Do not overcook; the cake will continue to cook slightly after microwaving.

Blend cottage cheese for ultra-smooth texture.
