Description
Soft and cozy cottage cheese cinnamon roll breakfast cookies made with oats and maple syrup.
Ingredients
1 cup cottage cheese
1 1/4 cups rolled oats
1/4 cup maple syrup
1 large egg
1 tsp ground cinnamon
1/2 tsp vanilla extract
1/2 tsp baking powder
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheet.
2. Blend or mash cottage cheese if desired.
3. Mix all ingredients until combined.
4. Scoop dough onto baking sheet and flatten slightly.
5. Bake 14–18 minutes until set.
6. Cool slightly before serving.
Notes
Blend cottage cheese for smoother texture.
Do not overbake—cookies should stay soft.
