These Cottage Cheese Carrot Cake Bars are protein-packed, low-sugar, and full of cozy spiced flavor. Perfect for breakfast, snack, or dessert.
Ingredients
1 cup cottage cheese
2 large eggs
½ cup almond flour (or oat flour)
2 tbsp honey or maple syrup (optional)
1 tsp vanilla extract
1 tsp cinnamon
½ tsp nutmeg
1 tsp baking powder
Pinch of salt
1 cup grated carrots
Optional: 2 tbsp chopped walnuts or raisins
Instructions
1. Preheat oven to 350°F and line an 8×8 pan with parchment.
2. Blend cottage cheese until smooth if desired.
3. Whisk cottage cheese, eggs, honey, and vanilla together.
4. Add almond flour, baking powder, cinnamon, nutmeg, and salt.
5. Fold in grated carrots and optional add-ins.
6. Spread into pan and bake 25–30 minutes until set.
7. Cool before slicing into bars.
Notes
For a smoother texture, blend cottage cheese before mixing.
For extra sweetness, add 1 more tablespoon of honey or maple syrup.
Chill before cutting for the cleanest slices.
