Ingredients
2 cups grated carrots
1 cup cottage cheese
1/2 cup almond flour
1/4 cup unsweetened applesauce
2 large eggs
1/4 cup maple syrup
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon cinnamon
Instructions
1. Preheat oven to 350°F (175°C) and prepare an 8×8-inch pan.
2. Blend cottage cheese, eggs, applesauce, maple syrup, and vanilla.
3. Stir in almond flour, baking powder, and cinnamon.
4. Fold in grated carrots.
5. Spread batter evenly into pan.
6. Bake 25–30 minutes until set.
7. Cool completely before slicing.
Notes
