Moist cottage cheese banana bread with blueberries — protein-packed, gluten-free, and perfect for breakfast or snacks.
Ingredients
2 ripe bananas, mashed
3 medium eggs
½ cup cottage cheese, blended smooth
2 tbsp maple syrup
1 tsp vanilla extract
2½ cups almond flour
1 tsp baking soda
1 tsp ground cardamom or cinnamon
1 cup blueberries plus extra for topping
Instructions
1. Preheat oven to 350°F and line a loaf pan.
2. Blend cottage cheese until smooth.
3. Mix bananas, eggs, cottage cheese, maple syrup, and vanilla.
4. Stir in almond flour, baking soda, and spice.
5. Fold in blueberries.
6. Bake 45–55 minutes until set.
7. Cool before slicing.
Notes
Blend cottage cheese fully for smooth texture.
Use ripe bananas for best sweetness.
