These moist, high-protein Cottage Cheese Apple Crumble Muffins are naturally sweetened, freezer-friendly, and perfect for breakfast or snacks. Made with wholesome oat flour, fresh apples, and creamy cottage cheese, they’re both healthy and indulgent.
Ingredients
1 cup cottage cheese
2 large eggs
1 tsp vanilla extract
1 tbsp maple syrup or sugar-free sweetener (optional)
1 cup oat flour
1 tsp baking powder
1 tsp cinnamon
Pinch of salt
1 cup diced apple (peeled if desired)
Crumble Topping (optional):
1/4 cup oat flour
1 tbsp coconut oil or butter, melted
1 tbsp maple syrup or sweetener
Pinch of cinnamon
Instructions
1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
2. Blend cottage cheese, eggs, vanilla, and maple syrup until smooth.
3. In a bowl, whisk oat flour, baking powder, cinnamon, and salt.
4. Combine wet and dry mixtures, stirring gently. Fold in diced apples.
5. Mix crumble topping ingredients in a small bowl.
6. Fill muffin cups with batter, sprinkle crumble on top.
7. Bake 18–22 minutes, until a toothpick comes out clean.
8. Cool for 5 minutes in the tin, then transfer to a rack.
Notes
For gluten-free muffins, use certified gluten-free oat flour.
Dice apples small for even cooking.
Freeze muffins in an airtight container for up to 2 months.
