Ingredients

  • 2 tbsp instant coffee or espresso powder (dissolved in 2 tbsp hot water)

  • ½ cup (120g) plain Greek yogurt

  • ¼ cup (60ml) honey or maple syrup

  • 3 large eggs

  • 1 tsp vanilla extract

  • 1 ½ cups (150g) almond flour

  • 1 tsp baking powder

  • ¼ tsp salt

  • Optional: chocolate chips or cinnamon


Instructions

  • Preheat oven to 350°F. Grease and line a cake pan.

  • Mix Greek yogurt, honey, eggs, vanilla, and cooled coffee.
