Description
Moist Coffee Date Maple Walnut Bread naturally sweetened with dates and maple syrup and flavored with coffee and cinnamon.
Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup chopped dates
3/4 cup hot brewed coffee
1/2 cup maple syrup
1/3 cup brown sugar
2 large eggs
1/2 cup melted butter or oil
1 teaspoon vanilla extract
3/4 cup chopped walnuts
Instructions
1. Soak chopped dates in hot coffee for 10 minutes.
2. Preheat oven to 350°F and line loaf pan.
3. Mix flour, baking soda, salt and cinnamon.
4. Whisk maple syrup, brown sugar, eggs, butter and vanilla.
5. Add date coffee mixture to wet ingredients.
6. Combine wet and dry ingredients.
7. Fold in walnuts.
8. Pour into loaf pan and bake 40–50 minutes.
9. Cool before slicing.
Notes
Soak dates for best texture.
Do not overmix batter.
Toast walnuts for more flavor.
Bread freezes well.
