Ingredients

1 cup unsalted butter, softened

1 ¼ cups brown sugar

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 ½ cups sweetened shredded coconut
Instructions

Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

Cream together the softened butter, brown sugar, and granulated sugar until fluffy.

Beat in the eggs one at a time, then mix in vanilla extract.

In a separate bowl, whisk together flour, baking soda, and salt.

Gradually add dry ingredients to wet mixture, stirring until just combined.

Fold in shredded coconut evenly.

Scoop dough into rounded balls and space 2 inches apart on baking sheets.

Bake for 10–12 minutes until edges are golden.

Cool on sheet for 5 minutes, then transfer to a rack.

For added texture, mix in ½ cup chopped pecans or white chocolate chips.
