Description

Rich & Moist Coconut and Mixed Fruit Traditional Cake packed with dried fruit and coconut. Perfect buttery tea-time classic.


Ingredients

Scale

1 3/4 cups all-purpose flour

1 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

3/4 cup butter

3/4 cup brown sugar

3 eggs

1 tsp vanilla

1/2 tsp coconut extract

1/2 cup yogurt

1 cup mixed dried fruit

3/4 cup desiccated coconut

2 tbsp flour (for fruit)

1/4 cup chopped nuts


Instructions

1. Preheat oven to 350°F.

2. Toss dried fruit with flour.

3. Mix dry ingredients.

4. Cream butter and sugar.

5. Add eggs and extracts.

6. Mix in yogurt.

7. Add dry ingredients.

8. Fold in coconut and fruit.

9. Bake 45-55 minutes.

10. Cool before slicing.

Notes

Do not overmix batter.

Tent with foil if browning too quickly.

Soak fruit in juice for extra flavor.
