Description
Soft Cinnamon Banana Oat and Almond Flour Breakfast Cake Slice made with ripe bananas, Greek yogurt, oat flour and almond flour. A wholesome, protein-rich breakfast bake.
Ingredients
2 ripe bananas, mashed
1/2 cup Greek yogurt
1/4 cup honey or maple syrup
2 large eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 cup oat flour
1/2 cup almond flour
1 teaspoon baking powder
Pinch of salt
Optional: nuts or chocolate chips
Instructions
1. Preheat oven to 350ยฐF and prepare an 8ร8-inch baking pan.
2. Mash bananas until smooth.
3. Whisk in yogurt, honey, eggs, and vanilla.
4. Stir in oat flour, almond flour, cinnamon, baking powder, and salt.
5. Fold in optional add-ins.
6. Pour into pan and bake 28โ35 minutes.
7. Cool before slicing.
Notes
Use ripe bananas for best sweetness.
Store in refrigerator up to 5 days.
Can be frozen for meal prep.
